Marinara Sauce

This recipe was given from a friend of mine that says this is the best marinara recipe ever.  He got it from a book (not sure the name of the book & author.  Will be trying it sometime.

Ingredients:
  • 1/2 cup extra virgin olive oil
  • 2 small onions, finely chopped
  • 2 garlice cloves, finely chopped
  • 2 celery stalks, finely chopped
  • 2 carrots, peeled and finely chopped
  • 1/2 tspn sea salt
  • 1/2 tspn freshly ground black pepper
  • 2 - 32 oz cans crushed tomatoes
  • 2 dried bay leaves
Directions:
In a large pot, heat the oil over a medium high flame.  Add onions & garlice.  Saute until onions are translucent (about 10 min.).  Add celery, carrots, and 1/2 tspn salt & pepper each.  Saute until all veggies are soft (about 10 min).  Add tomatoes & bay leaves.  Simmer uncovered over low heat until sauce thickens (about 1 hr).  Remove & discard bay leaves.  Season sauce with salt & pepper.  Sauce can be made 1 day ahead.  Cool, cover, refrigerate.  Rewarm before serving.
