Mom's Magnificent Meatloaf

This recipe is adapted from Everyday Paleo by Sarah Fragoso.

Serves 5
Prep time:  10 min.
Cook Time:  60-70 min.


  •  2 lbs ground beef
  • 1 cup almond meal
  • 3 Tbspns coconut flour
  •  2 eggs
  • 1-6 oz can tomato paste
  • 1 onion, chopped finely (I didn't finely chop mine)
  • 3 cloves garlic, minced
  • ½ Tbpsn sea salt
  • ¼ cup basil, dried
  • 1 Tbpsn oregano, dried
  • 2 tspns ground pepper
  • Preheat oven to 350° F
  • Mix all ingredients by hand in a large mixing bowl.
  • Spray "loaf" pan with olive oil or vegetable spray.
  • Place mixture in a “loaf” pan.
  • Bake for 60-70 min., or until meat is no longer pink in the middle. 

      My kids really loved this recipe.  I thought there would be a lot more leftovers, but there isn't much. 

I added coconut flour to the recipe after I made this.  Though it was very delicious, the meatloaf sort of fell apart some.  The coconut flour is much denser and will help the meatloaf bind together more the next time.  Super easy dish to make.
