Basic Cauli-Rice

Serves 4-6
Prep time:  5-10 min.
Cook Time:  10 min.

Ingredients:
  • ·         head of cauliflower
  • ·         Oil (bacon grease, grapeseed oil, coconut oil)
  • ·         2-3 cloves garlic, minced
  • ·         red, yellow, orange or green pepper, diced
  • ·         ½ bunch cilantro, chopped

Directions:
  • Heat up oil or bacon in a large skillet.
  •         
  • Cut cauliflower into large chunks.
  •  
  • Put cauliflower chunks in food process and process until it looks like small grains of rice.  If you don’t have a food processor, but have a cheese grater, you can grate the cauliflower, but this will take longer.  If you don’t have a cheese grater or a food processor, you can thinly slice the cauliflower and then crumble with your hands into a large bowl.  
  • Once you’ve “crumbled” or “chopped” the cauliflower into small bits that look like small grains of rice, you're ready to cook the cauliflower.
  • Stir fry cauliflower & garlic.
  • Dice pepper and chop cilantro.
  •  
  • Add pepper and stir fry for a few minutes.
  • Add cilantro and sauté for another 1-2 min.  
  • .
  • Be creative with the ingredients you put in.  This is in leiu of rice for those rice dishes.
  • If you don't want cilantro or the red pepper, omit those.  I just love color in my foods.  Also, season with sea salt & ground pepper as desired.
