This is a very easy dish, especially if you have a rice cooker. If you eat rice often enough, a rice cooker is inexpensive, saves time, and well worth it. I love throwing in other foods into the rice cooker to cook with the rice, so it gives it an even better flavor.
Sausage & Tomato Tumeric Rice and Baked Plantain Stuffed With Cheese & Guava Paste |
- 3 cups dried (uncooked) brown rice, short grain
- about 6 cups of water
- 2 Tbspns tumeric
- 1 Tbspn sea salt
- 1 1/4 lbs sausage, cut into small chunks
- 3 roma tomatoes, diced
Directions:
- Wash brown rice in a glass or stainless steel bowl. Put rice in the water and rub it with your fingers to get out any excess yucky stuff. Carefully pour out the water, not the rice. When the water is clear, it´s cleaned enough.
- Add 6 cups water, or you can do like I do measure the water by the knuckle method. Place your middle finger just atop the rice and fill the water to the first knuckle. This is always the right amount of water.
- Add tumeric & sea salt. No need to stir.
- Turn on rice cooker to cook.
- In about 25 min., on medium high heat, cook sausage.
- Brown sausage.
- Add tomatoes and reduce heat to low. Cover and simmer until rice is done.
This is leftover rice from 2 nights before. |
- When rice is done, add sausage and tomato mixture to the rice and mix well.
