Ingredients:
- · head of cauliflower
- · Oil (bacon grease, grapeseed oil, coconut oil)
- · 2-3 cloves garlic, minced
- · red, yellow, orange or green pepper, diced
- · ½ bunch cilantro, chopped
Directions:
- Heat up oil or bacon in a large skillet.
- Cut cauliflower into large chunks.
- Put cauliflower chunks in food process and process until it looks like small grains of rice. If you don’t have a food processor, but have a cheese grater, you can grate the cauliflower, but this will take longer. If you don’t have a cheese grater or a food processor, you can thinly slice the cauliflower and then crumble with your hands into a large bowl.
- Once you’ve “crumbled” or “chopped” the cauliflower into small bits that look like small grains of rice, you're ready to cook the cauliflower.
- Stir fry cauliflower & garlic.
- Dice pepper and chop cilantro.
- Add pepper and stir fry for a few minutes.
- Add cilantro and sauté for another 1-2 min.

- Be creative with the ingredients you put in. This is in leiu of rice for those rice dishes.
- If you don't want cilantro or the red pepper, omit those. I just love color in my foods. Also, season with sea salt & ground pepper as desired.
