This is a really simple dish with few ingredients.
The flavors of the bacon with the chard is sooo yummy. |
Ingredients:
- 5-7 slices of bacon, raw, cut into 1" pieces
- 4-6 cups of chard, cut into pieces (including stem)
- 1/3 cup shredded cheddar cheese
- 8-9 large eggs, whisked
- sea salt & ground pepper, to taste
Directions:
- Heat skillet to medium high and cook bacon until nearly cooked, but not crispy. Keep oil in pan.
- Add swiss chard. You may need to do this in batches like I did. The chard will greatly reduce as it cooks.
- Once all the chard is cooked and pretty wilted, poor the whisked eggs over the mixture.
- Sprinkle cheddar cheese on top.
- Add sea salt & ground pepper to taste.
- Reduce heat to medium low.
- Cover & cook for 10-15 min. The eggs should be set and not runny, nor burnt. It's better to have at a lower temperature than to cook for too high and burn the dish.
- Remove from heat for 1-2 minutes to cool.
- Cut and serve.
