Bacon & Chard Frittata

This is a dish I made probably over a week ago and it was very good.  A friend of mine came back from her Father-in-Law's with a HUGE back of organic chard and other greens.  It took us over 2 weeks to finish all of it because it was so much, while we ate these greens daily in smoothies, egg dishes, as a side veggie dish.  Very, very yummy and this was the most gigantic chard I've ever seen.

This is a really simple dish with few ingredients.

The flavors of the bacon with the chard is sooo yummy.
Serves 4 hearty servings (or 5-6 smaller servings)

Ingredients:
  • 5-7 slices of bacon, raw, cut into 1" pieces
  • 4-6 cups of chard, cut into pieces (including stem)
  • 1/3 cup shredded cheddar cheese
  • 8-9 large eggs, whisked
  • sea salt & ground pepper, to taste
Directions:
  • Heat skillet to medium high and cook bacon until nearly cooked, but not crispy.  Keep oil in pan.
  • Add swiss chard.  You may need to do this in batches like I did.  The chard will greatly reduce as it cooks.
  • Once all the chard is cooked and pretty wilted, poor the whisked eggs over the mixture.
  • Sprinkle cheddar cheese on top.
  • Add sea salt & ground pepper to taste.
  • Reduce heat to medium low.  
  • Cover & cook for 10-15 min.  The eggs should be set and not runny, nor burnt.  It's better to have at a lower temperature than to cook for too high and burn the dish.
  • Remove from heat for 1-2 minutes to cool.
  • Cut and serve.
