Serves 4 - 3 oz servings
Ingredients:
- 3 raw zucchinis, peeled & chopped
- 6 tbspn lemon juice
- 4 cloves garlic
- 2 tspn paprika
- 2 tpsn sea salt
- 1/2 tspn ground cumin
- 1 tspn turmeric
- 2 pinches ground cayenne pepper
- 1/2 cup raw tahini
- 1 cup sesame or sunflower seeds, soaked
- extra-virgin olive oil, for drizzling
- fresh parley, minced for garnish
Directions:
- Place all ingredients, except oil & parsley, into a food processor and blend until smooth or desired consistency. Drizzle with oil & garnish with parley.
